Tomato Cucumber Salad

This colorful salad is easy to prepare and can be done a day ahead, because there is no lettuce, all the vegetables stay crisp and fresh, however I don’t add the dressing until it is time to serve. Serves 4



  • 1/4 cup Skylake Ranch Pomegranate Marinade
  • 1 Tbsp rice vinegar
  • 1 Tbsp extra vargin olive oil
  • 1 1/2 tsp honey
  • 1 tsp stone ground mustard
  • 1 tsp flat leaf parsley (Italian parsley) finley chopped
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cucumber, sliced then quartered
  • 1 yellow bell pepper, chopped
  • 1/3 cup red onion, thinly sliced
  • 1 cup feta cheese

Combine all ingredients for dressing and whisk well, set aside or refrigerate overnight.
Combine all salad ingredients except for the feta cheese, and toss with dressing.
Top with feta after tossing then serve.
