Or possibly a quick appetizer for your upcoming BBQ. This blt appetizer is a winner for every occasion. The real secret is Skylake’s grill sauce. Full of flavor, and sweet with a hint of tang and layered with bacon, lettuce & cherry tomatoes in between two pieces of wheat bread.
Makes 24 mini sandwiches
1 lb thick sliced smoked bacon
1/2 cup Skylake Ranch Balsamic Pomegranate Grill Sauce
2 heads of butter lettuce
2 pints of cherry tomatoes (about 60 tomatoes)
8 pieces wheat sliced bread
Cook the bacon either in the oven at 425̊ for 15 minutes or fry it on the stove top. Allow to cool for 5 minutes.
Lightly toast the wheat bread and cut into quarters or triangles. Smooth the BBQ sauce over the bread, then add the cherry tomatoes, bacon and lettuce.
Top with the second piece of bread and put the toothpick on top. Repeat until done! Serve on a platter or long serving tray. For added bonus use some more of the grill sauce for dipping.
